Warm Kale Salad

INGREDIENTS:
DRESSING:

-1/4 cup olive oil

-1/4 cup apple cider vinegar

-1 tbsp brown sugar

- salt & pepper

SALAD:

-Kale (however much you want really!)

-Butternut squash (or sweet potatoes!)

-Candied pecans (or walnuts!)

-Dried cranberries (or pomegranate seeds!)

-Quinoa

DIRECTIONS:
1. Preheat oven to 400*F

2. Spread out cubed butternut squash onto a baking pan. Drizzle olive oil, and sprinkle salt and pepper on top. Toss
2. Place butternut squash in the oven and roast for 20 minutes or until slightly brown.
3. Add all the ingredients for the dressing into a bowl and mix well. 
4. To prep kale: remove stems and chop, then massage for at LEAST 2 minutes (it makes a big difference!)
5. Add toppings and dressing when you're ready to serve, and mix!
