PEANUT BUTTER CHOCOLATE CHIP COOKIES

Gluten Free!

INGREDIENTS: (makes 48 cookies)
-1/4 cup applesauce (substitute for butter)
-1 1/4 tsp baking soda
-1/4 cup honey
-3 cups rolled oats
-3/4 cup brown sugar

-6oz chocolate chips (aka 1/2 a bag)
-2 eggs (or flax eggs if you want it to be vegan)
-1 tsp vanilla extract
-1 cup peanut butter
**can be vegan as well! Just use maple syrup instead of honey and flax eggs instead of regular eggs**

DIRECTIONS:
1. Preheat oven to 350*F
2. Combine brown sugar, honey, and applesauce in a bowl
3. Stir in eggs. 
4. Add in peanut butter and stir
5. Stir in oats and chocolate chips
6. Form into tablespoon-sized dough balls and place them 2 inches apart on a greased cookie sheet (they do spread!! I didn’t realize that so some got smushed)
7. Bake for 10-12 minutes or until the edges are golden brown

Sure, I substituted the butter and sugar, but that doesn’t mean you have to/it's any healthier! Use the same amounts for each that were used for their substitutes and lmk how it goes :) I used brown sugar and didn’t substitute it because I just love the taste of it, so why the heck would I give that up?!
