CORN SALSA

Here’s a mock version on Chipotle’s CORN SALSA!🌽 So good for an appetizer, side dish, or on top of your entree (tacos, burrito bowls, salads, etc.)

INGREDIENTS:
- 3 ears of cooked corn (off the cob) 
- Lime juice from 1 lime
- 1 jalapeño, diced (I removed the seeds)
- 1/2 cup diced red onion
- 1 diced scallion
- 2 tbsp chopped cilantro
- Salt & pepper

DIRECTIONS:
1. Just add all the ingredients in a bowl, stir, refrigerate, and enjoy!
