TURKEY LETTUCE WRAPS

INGREDIENTS: (makes ~3-4 servings— 1 serving = 3 or 4 wraps)
-1 lb (organic) ground turkey
-head of (romaine or butter) lettuce, broken apart by the individual leaves
-1/2 onion
-3 scallions, chopped*
-2 cloves garlic, minced
-Shredded carrots 
-1 tbsp chopped cashews*
-1 can of water chestnuts*
SAUCE:
-1/3 cup coconut aminos (a healthier substitute for soy sauce: has amino acids and is much milder and a bit sweeter! I get mine at Trader Joe’s)
-1 tbsp rice vinegar
-1 tbsp honey
-1 tsp sesame oil
-1 tsp ginger*
*these ingredients are not necessarily needed, so if you don’t have them, no stress! They just add a little bit of extra texture/flavor. You could also add red pepper flakes, sriracha, dijon or honey mustard, etc.!

DIRECTIONS:
1. Add the ground turkey to a medium-high skillet until browned (crumble).
2. Add onion to saucepan and cook until they are slightly tender. Then, add in garlic, scallions, carrots, cashews, and water chestnuts. Cook for another minute or so.
3. In a separate bowl, stir together the sauce ingredients. Add to the sauce to the saucepan and toss so the turkey and veggies are well-coated. Cook for another minute.
4. Scoop into cleaned lettuce leaves and eat like a lil’ healthy taco :)
