-3 large (overripe) bananas
-1 egg
-1/3 cup plain Greek yogurt
-2 tbsp melted coconut oil
-1/3 cup light brown sugar or monk fruit
-1/4 cup honey (or maple syrup)
-1 tsp vanilla extract
-1 tsp baking soda
-pinch of salt
-1.5 cups (whole wheat) flour
-1/2 bag of chocolate chips
+ feel free to add walnuts, cinnamon, or peanut butter! 

1. Preheat oven to 350*F
2. Mash the bananas in a large bowl until mostly smooth
3. Whisk in the egg, then yogurt and coconut oil
4. Stir in brown sugar, honey, and vanilla
5. Stir in baking soda and salt
6. Stir/fold in the flour, then the chocolate chips
7. Pour into a greased 8x4 inch loaf pan and bake for 50-60 minutes (keep an eye on it!) (check at 35 minute mark, and you can put foil on top if it’s browning too quickly)
